What Are Convenience Fillings?

Convenience fillings—you might also see them called ready-made or ready-to-use fillings—are filling and flavouring masses that arrive ready to pipe, slice or spread, such as gianduja, praliné fillings, truffle masses and nut pralines. Don’t let the word “convenience” put you off, these are premium quality chocolate and pastry fillings made from the same ingredients you have in your kitchen. Think of them as a base to build on, not a compromise. Why Use Ready-Made Fillings Rather Than Make Everything from Scratch?

Consistency. A ready-made filling performs the same way batch after batch, whoever is on production duty; which means you can train up junior team members to produce fillings with ease, speed production up and rely less on one skilled pair of hands. 

Shelf life and food safety. Most ready-made fillings are low in water, so they keep far longer than a fresh cream ganache; bars and bonbons that genuinely last, with less microbiological risk to manage. 

Time and labour. Nobody wants to roast, grind and emulsify hazelnuts by hand every week. Opening a tub of praliné saves hours of skilled work, cuts waste to almost nothing and makes your costing per kilo easy to predict. 

Put those together and ready-to-use fillings become invaluable in high production periods—the Christmas run-up and wedding favour season, especially—when volumes jump and every hour in the kitchen counts. 

Is there still a place for fillings made from scratch? Absolutely. Your signature ganache is your signature, and no tub of pre-made filling replaces it. The smartest, most efficient kitchens do both.

Can You Flavour and Adapt Convenience Fillings?

Some, but not all. Ready-made fillings can be separated into two categories: the neutral, unflavoured (often white chocolate-based) ones that can be customised with flavourings, inclusions and more; and the ones you use just as they are.

Smooth Fillings to Add Crunch To:

Gianduja is chocolate and hazelnuts ground silky smooth. Callebaut’s milk (25% hazelnuts) and dark (30%) are great quality options. Warm and pipe it, or slice and enrobe it.

Which Texture Combination Is Recommended for Chocolate Fillings?

Creamy with crispy elements is the combination customers are going crazy for right now, or you could set a creamy filling against a gel, like a sharp pâte de fruit. Contrast keeps every bite interesting: all soft layers run into one another with no definition, all crunchy or chewy is hard work to eat and lacks interest.  

Fillings like Tintoretto and gianduja combine with feuilletine without softening it, so the crunch stays crisp for the life of the product, not just the first day on the counter.
