This is then the target figure you need to make in gross profit to break even. If you initially calculate it on a monthly or yearly basis, you can then translate that into a daily fixed cost, for convenience.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-4d93539 elementor-widget elementor-widget-heading\" data-id=\"4d93539\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t\t<h6 class=\"elementor-heading-title elementor-size-default\">Step 2 - Know the Variable Cost of Your Products<\/h6>\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-7fa9a6f elementor-widget elementor-widget-text-editor\" data-id=\"7fa9a6f\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t\t\t\t\t\t<p>You can do this by costing out the ingredients, packaging, etc. required to make a batch of the product. You should also measure how long it takes you to make the batch and add that in at the appropriate hourly rate. For each product you make, you should end up with a cost per kg or unit.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-5b411d2 elementor-widget elementor-widget-heading\" data-id=\"5b411d2\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t\t<h6 class=\"elementor-heading-title elementor-size-default\">Step 3 - Know Your Production Capacity<\/h6>\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-6f46eb9 elementor-widget elementor-widget-text-editor\" data-id=\"6f46eb9\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t\t\t\t\t\t<p>If you are making only a single product or type of product, e.g. chocolate bars or pralines, then this will be the number of bars or kgs of pralines you can make from start to finish each day.<\/p><p>The more different products you make, the more complicated this exercise becomes, because you don\u2019t necessarily know how much of each you might be required to make. A few things worth considering are:<\/p><ul><li>How strong is my brand?<\/li><li>What level of quality is my product?<\/li><li>How unique is it?<\/li><li>How much demand is there locally for my type of products?<\/li><li>How much competition do I have in my local area?<\/li><li>How price-sensitive are my customers?<\/li><li>How loyal are my customers to me personally?<\/li><li>How much potential is there to grow my business?<\/li><li>Do I even want to grow my business?<\/li><\/ul><p>But, the\u00a0<u>first priority<\/u>\u00a0must always be to cover your costs and not run out of cash!<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t<div class=\"elementor-column elementor-col-50 elementor-top-column elementor-element elementor-element-7a21bc4\" chocolatier \u2013 let\u2019s call her Sarah &#8211; has overheads of \u00a350,000 a year including her salary, so working 250 days a year means that her fixed costs average \u00a3200 per day, which is the amount of gross profit she has to make daily to break even, on average.<\/p><p>To keep things simple, let\u2019s also assume that she makes only 100g chocolate bars, which she sells from her premises, and that the variable cost of each bar is \u00a31 (including chocolate, inclusions, packaging and VAT).<\/p><p>Finally, let\u2019s assume that she is not VAT registered, so she doesn\u2019t quantity sold are just for illustration, but they highlight the normal rule of demand that the higher your price, the less you\u2019ll sell, and vice versa.<\/p><p><span style=\"color: var( --e-global-color-text ); font-weight: var( --e-global-typography-text-font-weight );\">So, in the table above, if you only consider net profit, then Sarah can sell her bars at \u00a32.50 or \u00a33.00. <\/span>But why make 200 bars when you can get away with making 150 and just sell them at a higher price to make the same profit?<\/p><p>Or consider if she had not understood her true costs and just thought that \u00a32 seemed like a good price to sell at, given that her cost was only \u00a31. She would have had to make 250 bars a day, but only \u00a350 in net profit. So, she would have been the archetypical \u201cbusy fool\u201d!<\/p><p>Knowing your cost structure allows you to make good pricing decisions.<\/p><p>An equally important consideration is how many bars Sarah thinks she can sell or make. If she can only sell or make 50 bars a day, then to make \u00a3200 of GP she would have to make \u00a34 of GP per bar, which means selling them at \u00a35 each.
